Red Quinoa & Jerk Barbecue veggie

Today’s delicious lunch was Red Quinoa and Jerk Barbecue Veggie. This meal serves two persons.



Quinoa Prep:


1 tablespoon of vegan butter

1 small red onion

1/2  table spoon (Bragg liquid amino or organic soy sauce)

1 cup of Red Quinoa


Gently rinse quinoa, 1 cup of quinoa to  2 cups of water in medium pan.  Bring quinoa and liquid to boil. Add Bragg liquid amino, vegan butter, add chopped red onion. Keep heat to medium for first 5 minutes and then reduce to low heat for next 15 minutes. Keep the pot covered and simmer until tender. Fluff occasionally with fork.

Jerk Barbecue Veggie:


1/3 of a head  Cauliflower

1 small Red onion

2 stalks of escallion(green onions)

10 String beans

2 cloves of garlic

1  Zucchini

2 Veggie Sausage

2 tablespoons of oil (organic avocado, coconut or sesame)

1 table spoon of Jerk Marinade

1 tablespoon of barbecue sauce


In a large frying pan, pour one table spoon of oil, I used avocado. Add chopped veggie sausages (diced). Add chopped cauliflower. Allow veggie sausage and Cauliflower to slightly brown. Add your favorite spices (I used Cajun spices). The add your Sting beans(I cut each bean stalk in 3 removing tips). Add zucchinis next, garlic(don’t forget to slice the garlic in tiny pieces). Top with your red onions. Go ahead and add your marinated jerk seasoning, stir everything together. You want a crunchy  consistency so don”t over cook. Ensure to add some Barbecue sauce at the end.


Plating: 1/2 cup of Quinoa sprinkle chopped green onions, and serving of delicious jerk barbecue veggies. ENJOY.
